Ingredients

  • 1 1/2 cups chicken breast, boneless and skinless, cooked and shredded
  • 1 (14-ounce) can fat-free refried beans
  • 1/2 cup jarred salsa verde, can substitute with salsa or enchilada sauce
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 18 (6-inch) corn tortillas
  • cooking spray, to taste
  • pico de gallo, optional, to taste, for serving
  • fresh cilantro, optional, to taste, thinly sliced, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Coat a baking sheet with cooking spray.

Step 3 -In a large bowl, add the chicken, the beans, the salsa verde, and the cheese and stir to combine.

Step 4 -Wrap the tortillas in moist paper towels.

Step 5 -Microwave the tortillas in the moist paper towels until soft and pliable, about 20-40 seconds. You may need to do this in batches for the best results.

Step 6 -Fill each of the warm tortillas evenly with the chicken mixture, being careful not to overfill them.

Step 7 -Roll the tortillas up and place them on the prepared baking sheet, seam-side down.

Step 8 -Spray the rolled tortillas with the cooking spray, coating them well.

Step 9 -Bake until browned and crispy, about 15-20 minutes.

Step 10 -Serve hot with the pico de gallo and the coriander.
