Ingredients

  • 1 (4-pound) pork shoulder or pork butt
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons oil
  • 12 ounces cola
  • barbeque sauce, optional, to taste, of your choice, for serving

Directions

Step 1 -Preheat the oven to 300 degrees F.

Step 2 -Trim the pork of excess fat and cut it into 4 pieces.

Step 3 -In a large bowl, add the brown sugar, the chili powder, the onion powder, the garlic powder, the cumin, the salt, and the black pepper and mix until combined.

Step 4 -Coat the pork pieces on all sides with the spice mixture.

Step 5 -In a Dutch oven pot over medium-high heat, add the oil.

Step 6 -Add the pork to the hot oil and cook until seared on all sides, about 30 seconds per side.

Step 7 -Transfer the Dutch oven from the heat.

Step 8 -Pour the cola around the pork in the Dutch oven.

Step 9 -Transfer the Dutch oven to the oven and cook, covered, for 3 hours.

Step 10 -Remove the lid and cook again until the pork is tender and easily pulls apart with a fork, about 1-2 hours.

Step 11 -Transfer the Dutch oven from the oven and shred the pork with a pair of forks.

Step 12 -Serve with the barbeque sauce.
