The Blueberry Buttermilk Breakfast Bake, or The BBBB, is a dessert you can and should eat for breakfast! Is there a better way to start the day? Little bursts of tart, bright blueberries swirl in a tender cake with the wonderful tang of buttermilk running throughout. It's sweet and moist and a little sprinkle of sugar on top just adds to the wonder of having slice after slice! The BBBB is a beautiful brunch or breakfast bounty!

Ingredients

  • 1/2 cup unsalted butter, room temperature, plus more, to taste, for greasing the baking pan
  • 1 large lemon, zested
  • 1 cup sugar, divided
  • 1 egg, room temperature
  • 1 teaspoon vanilla
  • 2 cups fresh blueberries, cleaned and picked over
  • 2 cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup buttermilk
  • powdered sugar, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Using the extra butter, grease an 8-9-inch square baking pan.

Step 3 -Line the greased baking pan with parchment paper.

Step 4 -In the bowl of a stand mixer or in a large mixing bowl, add 1/2 cup of the butter, the lemon zest, and all but 1 tablespoon of the sugar and beat until light and fluffy.

Step 5 -Add the egg and the vanilla to the butter mixture and beat until combined.

Step 6 -In a separate bowl, add the blueberries and 1/4 cup of the flour and toss to combine.

Step 7 -In a separate bowl, add the remaining flour, the baking powder, and the salt and whisk to combine.

Step 8 -Add 1/2 of the flour mixture to the butter mixture and stir with a spatula to incorporate.

Step 9 -Add the buttermilk and stir to combine.

Step 10 -Add the remaining flour mixture to the butter mixture and stir until the flour is absorbed.

Step 11 -Fold in the blueberries, leaving any excess flour in the bowl.

Step 12 -Spread the batter evenly in the prepared baking pan.

Step 13 -Sprinkle the batter with the remaining 1 tablespoon of sugar.

Step 14 -Bake until a toothpick inserted into the center comes out clean, about 35-45 minutes.

Step 15 -Cool the cake for at least 15 minutes.

Step 16 -Serve dusted with the powdered sugar.
