Traditional Cabbage Roll Soup is a cabbage roll in soup form! It's as simple and scrumptious as that! The beloved tomato sauce is now the base of the broth, with its bright sweetness permeating through each spoonful! Each bite is loaded with succulent bacon, savory ground beef, tender rice, and of course, the sweet and tender cabbage. Ingredients

  • 1 pound thick-cut bacon, diced
  • 1 large onion, diced
  • 1 pound lean ground beef
  • 3 cloves garlic, minced
  • 2/3 cup long grain rice
  • 6 cups cabbage, chopped
  • 1 (28-ounce) can diced tomatoes
  • 1 (10.75-ounce) can tomato soup
  • 2 tablespoons tomato paste
  • 5 cups beef broth
  • 1 1/2 cups vegetable juice
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • salt, to taste
  • pepper, to taste
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -In a skillet over medium-high heat, add the diced bacon and cook, while stirring, until crisp, about 5-8 minutes.

Step 2 -Using a slotted spoon, transfer the bacon pieces to paper towels to drain.

Step 3 -Reserve 1 tablespoon of the bacon drippings in the skillet, draining the remainder.

Step 4 -Reduce the heat to medium.

Step 5 -In the skillet with the bacon drippings, add the onions and the beef and cook, while crumbling, until the onions are browned and the meat is no longer pink, about 5-7 minutes.

Step 6 -Drain the excess fat from the skillet.

Step 7 -Transfer the beef mixture to a slow cooker.

Step 8 -In the slow cooker, add the garlic, the rice, the cabbage, the tomatoes and their juices, the tomato soup, the tomato paste, the broth, the vegetable juice, the paprika, the thyme, the Worcestershire sauce, the salt, and the pepper and stir to combine.

Step 9 -Cover the slow cooker and cook until the rice is fully cooked, 3-4 hours on high or 6-7 hours on low.

Step 10 -Add 1/2 of the bacon pieces to the soup and stir to combine.

Step 11 -Spoon the soup into serving bowls.

Step 12 -Serve the soup topped with the remaining bacon pieces and the chopped parsley.
