Sometimes you just crave the comfort classics. Like Turkey Noodle Casserole, for example. It warms you to the core and makes you the good kind of full. It's so good, it goes past good and into amazing. Bouncy noodles twirled with tender veggies and juicy turkey make up this dream-of-a-dish. Add in a little kick of spicy pimientos to keep it interesting and you've got yourself a meal you'll want to make over and over. Ready to be super satisfied? Turkey Noodle Casserole is a taste of home every time!
Ingredients
- 1 (8-ounce) package medium-size egg noodles
- 1/2 cup onion, chopped
- 1/4 cup green pepper, chopped
- 1/4 cup butter or margarine, melted
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1/4 cup plus 2 tablespoons parmesan cheese, grated and divided
- 1 tablespoon poppy seeds
- 1 teaspoon salt, plus more to taste
- 1/8 teaspoon red pepper
- 3 cups turkey, cooked and diced
- 1 (4-ounce) jar diced pimiento, drained
Directions
Step 1 -Lightly grease a 12x8x2-inch baking dish.
Step 2 -In a large pot of salted boiling water, cook the noodles according to the package directions.
Step 3 -Drain the cooked noodles well and set aside.
Step 4 -While the pasta is cooking, in a Dutch oven, sauté the onion and the green pepper in the butter until tender, about 3-5 minutes.
Step 5 -Add the flour to the veggie mixture and cook, constantly stirring, until smooth, about 1 minute.
Step 6 -Gradually add the milk to the veggie mixture and cook over medium heat, stirring constantly, until thickened and bubbly.
Step 7 -Stir the noodles, 1/4 cup of the parmesan, the poppy seeds, the salt, the red pepper, the turkey, and the pimiento into the veggie mixture and gently stir.
Step 8 -Spoon the pasta mixture into the prepared baking dish, cover, and chill for at least 8 hours and up to overnight.
Step 9 -Let the casserole stand at room temperature for 30 minutes.
Step 10 -Preheat the oven to 350 degrees F.
Step 11 -Bake, covered, for 45 minutes.
Step 12 -Carefully uncover and sprinkle with the remaining cheese.
Step 13 -Bake, uncovered, until the casserole is heated through, about 10 minutes.
Step 14 -Serve.
