Ingredients

  • 4 cups frozen cranberries, plus more, to taste, for garnish
  • 1 1/2 cups sugar
  • 3/4 cup water
  • 1 (.25-ounce) envelope unflavored gelatin
  • 1/4 cup lemon juice
  • 2 tablespoons orange juice
  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract

Directions

Step 1 -In a saucepan, add 4 cups the cranberries, the sugar, and the water and bring to a boil.

Step 2 -Reduce the heat to a simmer and cook the cranberries until they burst.

Step 3 -Strain the cooked cranberries through a food mill or sieve into a large bowl.

Step 4 -Stir the gelatin, the lemon juice, and the orange juice into the cranberries.

Step 5 -Let the cranberry mixture cool and thicken, until it coats the back of a spoon.

Step 6 -In a small bowl, add the heavy whipping cream and beat with an electric hand mixer until soft peaks form.

Step 7 -Add the confectioners' sugar and the vanilla to the whipped cream and beat until stiff peaks form.

Step 8 -Fold the whipped cream into the cranberry mixture.

Step 9 -Place the bowl in the refrigerator and let the cranberry mixture chill until it is set.

Step 10 -Serve the cranberry mixture garnished with the extra cranberries.
