Ingredients

  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 2 cups tomato juice
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • 3/4 cup wide egg noodles, cooked
  • fresh parsley, optional, chopped, for garnish

Directions

Step 1 -In a saucepan over medium heat, melt the butter.

Step 2 -Add the flour to the melted butter and stir to form a smooth paste.

Step 3 -Cook the flour mixture until it is golden and the raw flour smell disappears, about 1-2 minutes.

Step 4 -Gradually add the tomato juice and the water to the flour mixture, while stirring constantly.

Step 5 -Bring the soup mixture to a boil and cook, while stirring, until thickened, about 2 minutes.

Step 6 -Add the sugar and the salt to the soup mixture and stir to combine.

Step 7 -Add the egg noodles and cook until heated through, about 3-5 minutes.

Step 8 -Serve garnished with the parsley.
