The perfect breakfast: savory, sweet, and hearty enough to get you through the day (or at least until lunch, which can feel like an eternity some days). Put down the cereal bowl; you deserve something more memorable and more filling than that! A day like today calls for the All You Need Breakfast Casserole! Filled with playfully seasoned sausage and crunchy hashbrowns, there's only one thing that could make this meal better: pancakes! A tender, fluffy pancake topping already infused with smoky sweet maple flavor makes sure All You Need Breakfast Casserole really does have everything you need for the day!
Ingredients
- 1 pound ground pork breakfast sausage
- 1 cup yellow onion, diced
- 4 cups frozen diced hash brown potatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon onion powder
- 2 cups buttermilk pancake mix
- 1 1/2 cups water
- 1 teaspoon maple extract
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a large sauté pan over medium-high heat, add the sausage and the onion.
Step 4 -Crumble the sausage and cook until the onion is translucent and softened and the sausage is browned, about 5-7 minutes.
Step 5 -Add the hash brown potatoes, the salt, the pepper, and the onion powder to the pan, stirring well and cooking until the hash browns have mostly thawed, about 3 minutes.
Step 6 -Pour the mixture into the prepared baking dish, spreading it out evenly.
Step 7 -In a medium mixing bowl, combine the pancake mix, the water, and the maple extract, whisking until no large lumps remain (smaller lumps are okay and encouraged).
Step 8 -Pour the pancake batter over the potato and sausage mixture in the baking dish.
Step 9 -Bake the casserole until the pancake layer is golden brown across the top, about 36-40 minutes.
Step 10 -Serve!
