Ingredients
- For the salad:
- 1 (16-ounce) package spaghetti, cooked and cooled
- 2 1/4 cups tri-color coleslaw mix
- 5 medium carrots, shredded
- 1 bunch green onions, white and light green parts only, chopped
- 1 small bunch cilantro, chopped
- 1/4 cup sesame seeds
- 1 cup dry-roasted salted peanuts
- For the dressing:
- 1/4 heaping cup creamy peanut butter
- 1/2 cup seasoned rice vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon sriracha sauce
- salt, to taste
- 1/4 cup vegetable oil
- Optional, for garnish:
- sesame seeds, to taste
- dry-roasted salted peanuts, to taste
- fresh cilantro, to taste, sliced thinly
Directions
Step 1 -In a bowl, add the spaghetti, the coleslaw mix, the carrots, the green onions, 1 bunch of the cilantro, 1/4 cup of the sesame seeds, and 1 cup of the peanuts and toss well to combine.
Step 2 -In a microwave-safe bowl, add the peanut butter and microwave until it has slightly melted, about 30 seconds-1 minute.
Step 3 -Add the vinegar, the garlic powder, the sriracha, and the salt to the peanut butter and whisk to combine.
Step 4 -While whisking, slowly stream the vegetable oil into the peanut butter mixture and continue to whisk until it is smooth and combined.
Step 5 -Add the dressing to the salad and toss well to coat.
Step 6 -Chill the salad until ready to serve.
Step 7 -Serve garnished with the extra sesame seeds, the extra peanuts, and the extra cilantro.
