Ingredients

  • 3 (11-ounce) cans Green Giant Mexicorn®, drained
  • 1 (7-ounce) can chopped green chiles
  • 1 (6-ounce) can chopped jalapeño peppers, drained
  • 1/2 cup green onions, chopped, plus more, to taste, for garnish
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 (16-ounce) package sharp cheddar cheese, shredded
  • 3 bags corn chips, such as Fritos® Scoops!®

Directions

Step 1 -In a large bowl, add the Mexicorn, the green chiles and their juices, the jalapeño peppers, 1/2 cup of the green onions, the mayonnaise, the sour cream, the black pepper, the garlic powder, and the cheese and stir to combine.

Step 2 -Tightly cover the bowl and refrigerate the dip, about 2-8 hours.

Step 3 -Garnish the dip with the extra green onions.

Step 4 -Serve the dip with the corn chips.
