Salmon might strike you as a summertime, beach-side dish, but oh, that's where you'd be mistaken! Salmon can be for any season; all you need is the right glaze! Autumn Salmon illustrates this point by glazing the succulent, rosy fish with a glaze that is equal parts tangy, sweet, savory, and herbaceous. It's really quite easy to make too; just whisk the glaze together, marinate the salmon, and roast. The result is a fillet of fish that feels perfect for enjoying while also enjoying the refreshing chill in the air. Autumn Salmon will warm you up from sea to shining sea!
Ingredients
- 1 cup apple cider
- 1/4 cup soy sauce
- 1/4 cup butter
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 teaspoon pepper
- 1 small red onion or 1 small shallot, sliced thinly
- 1 pound salmon fillet
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -In a 9x13-inch glass baking dish, mix the apple cider, the soy sauce, the butter, the garlic, the bay leaf, the rosemary, the thyme, the pepper, and the red onions.
Step 3 -Add the salmon, flipping it once to ensure it is coated on all sides and letting it sit skin-side up.
Step 4 -Marinate the salmon in the fridge for 30 minutes.
Step 5 -Flip the salmon so it is skin-side down.
Step 6 -Bake until cooked through at 145 degrees F internally, about 20 minutes.
Step 7 -Serve.
