Ingredients

  • 5 strips bacon, thick-cut and chopped
  • 1 mango, peeled and diced
  • 4 cups white rice, cooked and day-old
  • chives, optional, to taste, chopped, for garnish

Directions

Step 1 -In a large skillet over medium heat, saute the chopped bacon until nearly crisp, about 5-7 minutes.

Step 2 -Transfer the bacon to a paper-towel-lined plate.

Step 3 -Remove all but 2 tablespoons of fat in the pan.
