Ah, how to get Valentine's Day started properly? Always a particularly fraught question; you want to set the right tone for the day and show just how much you care. So, take the anxiety out of the decision with speedy and sweet Baked Strawberry Donuts! These rosy, fruity, and joyous treats are filled with the summery, floral notes of strawberries in each tender bite and then topped with a glistening homemade strawberry glaze. Baked Strawberry Donuts might be better than buying a bouquet of roses because nothing invokes the spirit of Valentine's Day better than an indulgent treat like this!
Ingredients
- For the donuts:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup granulated sugar
- 1/4 cup oil
- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced small
- For the strawberry glaze:
- 2 fresh strawberries, hulled
- 1 cup powdered sugar, plus more as needed
- 1 teaspoon lemon zest
- milk, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a donut pan with oil or butter.
Step 3 -In a large bowl, whisk the flour, the baking powder, the baking soda, and the salt together.
Step 4 -In a separate bowl, whisk the egg, the sugar, the oil, the sour cream, and the vanilla together until combined.
Step 5 -Add the flour mixture to the egg mixture and stir until just combined.
Step 6 -Fold the diced strawberries into the batter.
Step 7 -Evenly transfer the batter to the prepared donut pan, filling each space about 3/4 full.
Step 8 -Bake until a toothpick inserted into the thickest part of the donut comes out mostly clean, about 12-15 minutes.
Step 9 -Let the donuts cool in the pan for 5 minutes.
Step 10 -Transfer the donuts to a wire rack to cool completely.
Step 11 -Add the fresh hulled strawberries to a blender and liquify.
Step 12 -Transfer the strawberry purée to a small bowl.
Step 13 -Add the powdered sugar and the lemon zest to the strawberry purée and whisk it together until a smooth glaze forms. Add milk to thin the glaze as needed or add more of the powdered sugar to thicken it.
Step 14 -Once the donuts are mostly cool, dredge the tops of them in the glaze.
Step 15 -Serve.
