But what if you could take it one step further? What if you could enjoy all the flavors of that hearty, savory beef, plus all your favorite toppings and a tangy, creamy sauce... all of that on top of a crunchy, salty spud? Well, guess what?! That's exactly what Cheeseburger Pigskins are! These guys satisfy your cheeseburger and fries cravings with just one bite every time. It's exciting, right? To think that you're just a few steps away from making all your mealtime dreams come to reality with Cheeseburger Pigskins! What an accomplishment!
Ingredients
- For the potato skins:
- 4 russet potatoes, scrubbed clean
- olive oil, to taste
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 pound ground beef
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- cayenne, to taste
- butter, to taste, melted
- 2 cups cheddar cheese, shredded
- 1 tablespoon sesame seeds
- For the sauce:
- 1/2 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon ketchup
- 1 tablespoon apple cider vinegar
- 1 teaspoon paprika
- For serving:
- cherry tomatoes, to taste, chopped, for topping
- iceberg lettuce, to taste, finely shredded, for topping
- sweet pickle relish, to taste, for serving
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a large baking sheet with foil.
Step 3 -Place the potatoes on top of the foil, pierce them all over with a fork, and rub them with the oil and season with the salt and the pepper.
Step 4 -Bake the potatoes until the skin is crispy and the potatoes are tender, about 1 hour.
Step 5 -Let the potatoes cool slightly until they are cool enough to handle.
Step 6 -While the potatoes are cooling, heat a large skillet over medium-high heat.
Step 7 -Add the ground beef, the Worcestershire sauce, the garlic powder, the cayenne, the salt, and the pepper to the heated skillet and cook until the beef is no longer pink, about 5-7 minutes. Drain the excess fat.
Step 8 -In a small bowl, whisk the mayonnaise, the mustard, the ketchup, the apple cider vinegar, and the paprika until smooth.
Step 9 -Switch the oven to broil.
Step 10 -Cut the cooled potatoes in half lengthwise, then cut each half crosswise again.
Step 11 -Use a spoon to scoop out the flesh of the potatoes, leaving a 1/4-inch-thick skin. Reserve the scooped-out potato filling for another use.
Step 12 -Return the potato skins, cut-side up, to the baking sheet and brush with the melted butter.
Step 13 -Top the potato skins with the cooked beef, the cheese, and the sesame seeds.
Step 14 -Broil the potato skins until the cheese is bubbling, about 3 minutes.
Step 15 -Transfer the potato skins to a serving platter and top with the tomatoes, the lettuce, the relish, and drizzle with the sauce.
Step 16 -Serve warm.
