Ingredients
- 1/2 cup balsamic vinegar
- 1 teaspoon sugar
- 2 small chicken breasts, cubed
- salt, to taste
- pepper, to taste
- 1 teaspoon Italian seasoning
- 1 loaf of french bread
- 1/2 cup butter, softened
- 3 cloves garlic, minced
- 2 cups mozzarella cheese, freshly grated
- 1 cup grape tomatoes, sliced in half
- 3 tablespoons basil, freshly chopped
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a small saucepan over medium heat, combine the balsamic vinegar and sugar.
Step 3 -Bring the vinegar mixture to a boil.
Step 4 -Reduce the heat to low and let simmer until it reduces by half and has thickened, about 10 minutes.
Step 5 -Remove the saucepan from the heat and set it aside.
Step 6 -In a large skillet over medium-high heat, cook the cubed chicken until thoroughly cooked through at 165 degrees F, about 6-8 minutes.
Step 7 -Season the chicken with salt, pepper, and Italian seasoning.
Step 8 -Cut the french bread in half lengthwise.
Step 9 -Place the loaf halves cut side up on a large baking sheet.
Step 10 -In a bowl, combine the softened butter and the garlic, stirring.
Step 11 -Spread the garlic butter over both of the french loaves' cut sides.
Step 12 -Top each half with the cooked chicken and the mozzarella cheese.
Step 13 -Place the sliced tomatoes on the loaf halves.
Step 14 -Place the loaf halves in the oven and bake until the cheese is melted and bubbly, for about 15-20 minutes.
Step 15 -Remove the loaf halves from the oven and let each stand for about 5 minutes.
Step 16 -Serve with chopped basil and the balsamic reduction.
