Chicken Fajita Spaghetti is the Italian-Tex-Mex fusion you didn't know you needed in your life! Tex-Mex spices and fajita vegetables, with savory bites of chicken, serve as the base for a rich and creamy tomato sauce to be draped over spaghetti! You've never had a pasta night like with Chicken Fajita Spaghetti... or you've never had a Taco Tuesday like this! It works both ways!
Ingredients
- 12 ounces spaghetti
- 1 tablespoon extra-virgin olive oil
- 1 pound chicken breasts, boneless and skinless, cut into 1-inch pieces
- kosher salt, to taste
- ground black pepper, to taste
- 1 large onion, sliced
- 2 bell peppers, color of your choice, sliced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1 (15-ounce) can fire-roasted diced tomatoes
- 1/2 cup low-sodium chicken broth
- 3/4 cup half-and-half
- 1/2 cup cheddar cheese, shredded
- 1/2 cup pepper jack cheese, shredded
- cilantro leaves, optional, to taste, for garnish
Directions
Step 1 -In a large pot of salted, boiling water, add the spaghetti and cook it to al dente, according to the package directions.
Step 2 -Drain the spaghetti and set it aside.
Step 3 -In a large skillet over medium-high heat, add the olive oil.
Step 4 -Add the chicken pieces to the hot oil and season them with the salt and the black pepper.
Step 5 -Cook the chicken pieces, while stirring occasionally, until they are golden and cooked through to an internal temperature of 165 degrees F, about 6 minutes.
Step 6 -Add the onions and the bell peppers and cook, while stirring, until they are softened, about 5-7 minutes.
Step 7 -Add the chili powder, the cumin, and the oregano to the chicken mixture and stir to combine and coat.
Step 8 -Add the tomatoes and their juices, the chicken broth, and the half-and-half to the chicken mixture and stir to combine.
Step 9 -Bring the chicken mixture to a simmer and allow it to simmer until it is slightly reduced, about 3 minutes.
Step 10 -Add the spaghetti to the chicken mixture and toss until coated well.
Step 11 -Transfer the skillet from the heat.
Step 12 -Add the cheddar and the pepper jack to the chicken mixture and stir until melted and creamy.
Step 13 -Taste the chicken mixture for seasoning and add the salt and the black pepper, as needed.
Step 14 -Serve garnished with the cilantro.
