The Chopped Cheese is New York City's answer to the Philly favorite steak-and-cheese. Instead of shaved steak, Chopped Cheese uses ground beef for its savory filling, and it forgoes mushrooms and grilled peppers entirely. Instead, it grills up onions with the beef and "chops" the cheese into the meat, so each bite is melty and mouth-watering! The roll being toasty and warm certainly helps make this sandwich stand out even against its more famous cousin!
Ingredients
- For the sandwiches:
- 2 pounds ground beef, 80/20 blend
- 1 white onion, chopped
- 4 cloves garlic, chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 6 hoagie rolls, split
- 12 slices American cheese
- 6 tablespoons mayonnaise
- Optional, for serving:
- lettuce, to taste, shredded
- tomato slices, to taste
- potato chips, to taste
Directions
Step 1 -In a large pot or skillet over medium-low heat, add the ground beef and cook, while crumbling, until most of the fat has rendered out, about 7-8 minutes. It is ok if some pink remains.
Step 2 -Increase the heat to medium.
Step 3 -Add the onions and the garlic and cook until the onion softens, about 4-5 minutes.
Step 4 -Add the salt, the pepper, and the Worcestershire sauce to the beef mixture and stir to combine.
Step 5 -Transfer the pot from the heat.
Step 6 -On a griddle or a large, clean skillet over medium heat, add the hoagie rolls in batches, cut-sides down, and toast until browned, about 2-3 minutes.
Step 7 -Transfer the rolls, cut-side up, to a plate and repeat until all of the rolls are toasted.
Step 8 -On the same griddle or skillet over medium low-heat, add the beef mixture in 6 equal portions, working in batches, as needed.
Step 9 -Cook the beef portions until heated through, then cover each of the portions with 2 slices of the cheese.
Step 10 -Cook the beef mixtures until the cheese melts, about 2-4 minutes.
Step 11 -Using the side of a metal spatula, roughly "chop" each beef portion to mix the cheese into the beef.
Step 12 -Evenly add 1 tablespoon of the mayonnaise to 1 of the toasted sides of each of the rolls.
Step 13 -Place 1 of the rolls, cut-sides down, on top of each portion of the beef mixture and let them cook for 30 seconds.
Step 14 -Using a spatula, simultaneously flip the beef mixture and the rolls, aiming to keep the beef mixture inside the roll as much as possible.
Step 15 -Add the lettuce and the tomatoes on top of the beef filling layers.
Step 16 -Serve the sandwiches immediately with the potato chips.
