3... 2... 1... Lift off! Get ready to blast off to a galaxy of sweetness and joy! Copycat Cosmic® Brownies take plain 'ole brownies and add a little bit of fun to make them out-of-this-world delicious. You might recognize these colorfully sprinkled, fudgy icing-topped chocolate treats from a familiar package at the store, but we can promise you that these stellar replicas will have you even more over-the-moon than ever before! You could say Copycat Cosmic Brownies bring the galactic adventures and the yummy flavor, and after you taste them, you'll be reaching for the stars!
Ingredients
- For the brownies:
- 3/4 cup butter, melted
- 1 cup sugar
- 2/3 cup brown sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1 tablespoon cornstarch
- salt, to taste
- 3 tablespoons milk
- For the ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup milk chocolate chips
- 1/2 cup heavy cream
- sprinkles, optional, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly grease a 9x13-inch baking dish.
Step 3 -In the bowl of a stand mixer, beat the melted butter, the sugar, the brown sugar, and the vanilla extract until the mixture is light and fluffy, about 2 minutes.
Step 4 -Add the eggs, one at a time, to the butter mixture and mix until they are combined.
Step 5 -In a medium bowl, whisk the flour, the cocoa powder, the baking powder, the cornstarch, and the salt together.
Step 6 -With the mixer speed on low, alternate adding the dry ingredients and the milk to the butter mixture, and mix until just combined.
Step 7 -Pour the batter into the prepared baking dish and use a rubber spatula to evenly spread it out.
Step 8 -Bake until a toothpick inserted in the center comes out clean, about 18-25 minutes.
Step 9 -Allow the brownies to cool in the dish.
Step 10 -While the brownies cool, in a microwave-safe bowl, combine the semi-sweet chocolate chips, the milk chocolate chips, and the heavy cream.
Step 11 -Microwave the chocolate mixture for 1 minute and then stir. Repeat until all the chocolate chips melt and become smooth.
Step 12 -Beat the ganache for 1 minute.
Step 13 -Pour the ganache over the cooled brownies and use a rubber spatula to evenly spread it.
Step 14 -Top the ganache with the sprinkles.
Step 15 -Slice and serve.
