  • 2 tablespoons olive oil
  • 1/2 pound ground beef
  • 1 tablespoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika

  • 1 (12-ounce) bag tortilla chips
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup frozen corn kernels
  • 1/2 cup black olives, sliced
  • 1 cup white cheddar cheese, shredded
  • 1 cup yellow cheddar cheese, shredded
  • 1 cup tomatoes, diced, for serving
  • 1 tablespoon green onions, finely chopped, for serving

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a skillet over medium-high heat, add the oil and heat until it sizzles and simmers.

Step 3 -Add the beef and the garlic to the heated oil and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.

Step 6 -Evenly sprinkle the beef mixture over the tortilla chips, then evenly top with the black beans, the corn, the black olives, the white cheddar cheese, and the yellow cheddar cheese.
