  • 1/2 pound bacon strips, chopped
  • 1 (16-ounce) package fettuccine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup half-and-half
  • 4 large eggs
  • 1/2 cup Romano cheese, grated, plus more, to taste, for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • fresh parsley leaves, to taste, for garnish

Directions

Step 1 -In a large skillet over medium heat, add the bacon and cook, while stirring occasionally, until crisp, about 5-7 minutes.

Step 2 -Using a slotted spoon, transfer the bacon to paper towels to drain.

Step 3 -Reserve 1 tablespoon of the drippings in the skillet, draining the remainder.

Step 4 -In a Dutch oven filled with salted, boiling water, add the fettuccine and cook it to al dente, according to the package directions.

Step 5 -Drain the pasta and return it to the pot.

Step 6 -Heat the drippings in the skillet over medium heat.

Step 7 -Add the onions to the drippings and cook, while stirring, until tender, about 2-3 minutes.

Step 8 -Add the garlic and cook, while stirring, until fragrant, about 1 minute.

Step 9 -Reduce the heat to medium-low.

Step 10 -Add the half-and-half to the onion-garlic mixture and stir to combine.

Step 11 -In a small bowl, add the eggs and beat lightly.

Step 12 -Slowly add a little of the heated cream mixture into the eggs, while whisking vigorously, until the eggs are tempered.

Step 13 -Add the egg mixture to the skillet, while whisking constantly, and cook until a thermometer reads 160 degrees F, about 8-10 minutes; make sure to keep stirring so the eggs don't scramble.

Step 14 -Add 1/2 cup of the cheese, the salt, the pepper, and the bacon into the sauce and stir to combine.

Step 15 -Add the fettuccine and toss to combine.

Step 16 -Serve garnished with the parsley and the extra cheese.
