Ingredients

  • 1 (4-pound) prime rib roast, boneless
  • 1/4 cup unsalted butter, room temperature
  • 4 cloves garlic, minced
  • 1 tablespoon kosher salt
  • 2 teaspoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground black pepper

Directions

Step 1 -In a roasting pan, add the rib roast and allow it to come to room temperature, about 4 hours.

Step 2 -Preheat the oven to 400 degrees F.

Step 3 -In a small bowl, add the butter, the garlic, the salt, the olive oil, the thyme, the rosemary, and the black pepper and stir until combined.

Step 4 -Spread the butter mixture evenly over the outside of the roast.

Step 5 -Roast the prime rib for 25 minutes.

Step 6 -Reduce the oven temperature to 225 degrees F.

Step 7 -Cover the prime rib with foil and roast until it reaches your desired level of doneness, about 1 hour-1 hour 30 minutes for an internal temperature of 145 degrees F for medium. Make sure to start checking the internal temperature of the beef at the 45-minute mark.

Step 8 -Transfer the prime rib from the oven and let it rest for at least 20 minutes.

Step 9 -Serve.
