Ingredients
- 8 ounces rigatoni
- 3/4 pound ground beef
- 1/2 cup onions, chopped
- 1 (15-ounce) can pizza sauce
- 2/3 cup cream of mushroom soup
- 2 cups part-skim mozzarella cheese, shredded
- 1 (3.5-ounce) package pepperoni slices
- fresh basil or arugula, to taste, chopped, for garnish
Directions
Step 1 -In a pot of salted, boiling water, cook the rigatoni to al dente, according to package directions. Drain the water.
Step 2 -In a large skillet over medium, add the beef and the onions and cook, while crumbling the meat, until the beef is no longer pink. Drain the excess grease.
Step 3 -Reduce the heat to low. Add the pizza sauce, the cream of mushroom soup, and the cheese to the beef mixture and cook, while stirring, until the cheese is melted.
Step 4 -Add the cooked rigatoni and the pepperoni slices to the beef mixture and stir to combine. Cook until they are heated through.
Step 5 -Serve the pasta mixture garnished with the basil.
