Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 cup walnuts
  • 1 pound shrimp, peeled and deveined
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 large eggs, beaten
  • 1 cup cornstarch
  • vegetable oil, to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons heavy cream
  • white rice, to taste, cooked and warm, for serving
  • green onions, to taste, thinly sliced, for garnish

Directions

Step 1 -In a small saucepan over medium heat, add the water and the sugar and bring to a boil.

Step 2 -Add the walnuts to the sugar water and let them boil for 2 minutes.

Step 3 -Use a slotted spoon to transfer the walnuts to a baking sheet and let them cool.

Step 4 -Pat the shrimp dry with a paper towel. Lightly season them with the salt and the pepper.

Step 5 -Place the beaten eggs in a shallow bowl and the cornstarch in a second shallow bowl.

Step 6 -Dip the seasoned shrimp in the eggs, then in the cornstarch to coat them well.

Step 7 -In a large skillet over medium heat, add 1 inch of the oil.

Step 8 -Add the dredged shrimp, in batches, and fry until they are golden, about 3-4 minutes.

Step 9 -Use a slotted spoon to transfer the cooked shrimp to a paper-towel-lined plate to drain.

Step 10 -In a medium bowl, add the mayonnaise, the honey, and the heavy cream and whisk to combine.

Step 11 -Add the cooked shrimp to the sauce and toss to combine.

Step 12 -Serve the shrimp over the rice, sprinkled with the candied walnuts and the green onions.
