Ingredients

  • For the pasta:
  • 2 large zucchini, coarsely grated
  • 12 ounces linguine
  • 1/4 cup olive oil
  • 5 cloves garlic, thinly sliced
  • 1 red chile, thinly sliced
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice (from about 2 lemons)
  • 1/2 cup parmesan cheese
  • kosher salt, to taste
  • Optional, for garnish:
  • lemon zest, to taste, grated
  • parmesan cheese, to taste, grated
  • 1 cup microgreens

Directions

Step 1 -In a colander, place a clean dish towel and spread it out.

Step 2 -Set the colander over a bowl.

Step 3 -Add the grated zucchini to the colander and let it rest there to drain until ready to use.

Step 4 -In a large pot of salted, boiling water, add the linguine and cook it to al dente, according to the package directions.

Step 5 -Reserve 3/4 cup of the cooking water and drain the remainder.

Step 6 -In a large skillet over medium-low heat, add the olive oil.

Step 7 -Add the garlic and the chile and cook, while stirring often, until the garlic is golden, about 4-6 minutes.

Step 8 -Transfer the skillet from the heat.

Step 9 -Add 1 teaspoon of the lemon zest, the lemon juice, 1/2 cup of the parmesan cheese, 1/4 cup of the reserved pasta water, and the salt to the garlic mixture and stir to combine.

Step 10 -Add the cooked pasta to the sauce mixture.

Step 11 -Place the skillet over medium-high heat and cook, while tossing, until the noodles are well-coated. If the sauce seems too thick, add the remaining reserved pasta water, a little at a time, until the sauce reaches the desired consistency.

Step 12 -Wrap the dish towel around the grated zucchini and squeeze out any remaining liqiud.

Step 13 -Add the zucchini to the skillet and stir to combine.

Step 14 -Serve garnished with the extra lemon zest, the extra parmesan, and the microgreens.
