Once you make Gobble Gobble Oatmeal, you'll just want to gobble gobble it all up! Each slice of this oatmeal bake is loaded with classic, warming autumnal spices, fragrant pumpkin, and hearty oats, with an infusion of flaxseed to lend you some extra energy. Your favorite nuts bring the crunch and maple syrup brings the smoky sweetness to the forefront. A slice of Gobble Gobble Oatmeal is exactly what you need to energize you for the day ahead, whether that's a day at work, a day at home, or a day getting ready to welcome guests for the holidays. It certainly has that holiday taste in spades!
Ingredients
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1 1/2 cups unsweetened almond milk
- 1 cup canned pumpkin
- 1/4 cup pure maple syrup, plus more for serving
- 1 tablespoon ground flaxseed
- 1 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup pecans or walnuts, chopped and divided
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Grease an 8-inch square baking dish with cooking spray.
Step 3 -In a large bowl, mix the oats, the baking powder, the pumpkin pie spice, the cinnamon, and the salt, stirring to combine.
Step 4 -Add the milk, the pumpkin, the maple syrup, the flaxseed, the coconut oil, and the vanilla to the oat mixture, stirring well to combine.
Step 5 -Gently fold 1/4 cup of the nuts into the oatmeal mixture.
Step 6 -Carefully pour the oatmeal mixture into the prepared baking dish.
Step 7 -Sprinkle the remaining nuts on top of the oatmeal mixture.
Step 8 -Bake until the top is golden and set, about 30-35 minutes.
Step 9 -Transfer from the oven and allow to cool for 2-3 minutes.
Step 10 -Serve with the extra maple syrup.
