Crisp yet fluffy English muffins sandwich a classic filling of fluffy eggs, succulent Canadian bacon, and melty cheese. No need for ketchup to enjoy Golden Egg Sammies — only a moment (literally) of your time and an empty stomach!

Ingredients

  • 4 tablespoons butter, softened, divided
  • 4 English muffins, split and toasted
  • 4 slices Canadian bacon
  • 4 large eggs
  • 1/2 cup water
  • 4 slices American cheese

Directions

Step 1 -Using 1 tablespoon of the butter, evenly butter the cut-sides of the English muffins.

Step 2 -In a large skillet over medium-high heat, melt 2 tablespoons of the remaining butter.

Step 3 -Add the Canadian bacon slices to the melted butter and cook, flipping them once, until they are slightly browned and heated through, about 1-2 minutes per side.

Step 4 -Transfer 1 slice of the Canadian bacon to each of the English muffin bottom halves.

Step 5 -Add the remaining butter to the skillet and allow it to melt.

Step 6 -Coat four canning lids or egg rings with cooking spray.

Step 7 -Place the canning lids in the hot melted butter in the skillet.

Step 8 -Crack 1 of the eggs into each canning lid in the hot skillet.

Step 9 -Pour the water all around the canning lids and immediately cover the skillet.

Step 10 -Cook, covered, until the eggs are set, about 2-3 minutes.

Step 11 -Carefully remove the rings from the eggs; the rings will be very hot.

Step 12 -Transfer 1 of the cooked eggs on top of each of the Canadian bacon layers.

Step 13 -Top each of the eggs with 1 slice of the cheese, then close the sandwiches with the English muffin top halves.

Step 14 -Serve immediately.
