Ingredients

  • 2 medium sweet potatoes, peeled and shredded
  • 1 pound Brussels sprouts, trimmed and thinly sliced
  • 2 cups ham, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons avocado oil
  • 1 teaspoon sea salt
  • 6 eggs, optional, to taste, fried and warm, for serving

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -On a large, rimmed sheet pan, add the sweet potatoes, the Brussels sprouts, the ham, and the garlic.

Step 3 -Drizzle the ham mixture with the avocado oil and sprinkle it with the salt.

Step 4 -Using your clean hands or tongs, toss the ham mixture until everything is evenly coated.

Step 5 -Divide the ham mixture between two sheet pans.

Step 6 -Roast, rotating the pans halfway through and tossing the hash occasionally, until the vegetables are crispy and caramelized in places, about 20-25 minutes.

Step 7 -Serve the hash with the fried eggs.
