Super-tender chicken and thinly sliced potatoes all take a dip in a honey-sweetened, lemon-brightened, and soy-infused sauce. A constellation of vegetables adds color and vibrance to this Honey Dinner. This is a simple but scrumptious and speedy dinner, and you'll be amazed how it comes together so beautifully!
Ingredients
- 1 tablespoon canola oil
- 2 chicken breasts, boneless and skinless, cut into 1-inch pieces
- salt, to taste
- black pepper, to taste
- 3 cups potatoes, thinly sliced
- 2 tablespoons butter, melted
- 1 teaspoon garlic, minced
- 1/4 cup honey
- 1/4 cup lemon juice
- 1 tablespoon soy sauce
- 1/2 cup chicken broth
- 1 tablespoon cornstarch
- 1 cup frozen mixed vegetables, of your choice
- lemon slices, optional, to taste, for garnish
Directions
Step 1 -In a large skillet over medium-high heat, add the oil.
Step 2 -Season the chicken pieces with the salt and the pepper.
Step 3 -Add the chicken pieces to the hot oil and cook, while flipping once, until just browned, about 2-3 minutes per side.
Step 4 -Add the potatoes to the skillet and stir to combine.
Step 5 -Cover the skillet and let the chicken-potato mixture cook for 5 minutes.
Step 6 -In a mixing bowl, add the melted butter, the garlic, the honey, the lemon juice, the soy sauce, the chicken broth, and the cornstarch and whisk to combine.
Step 7 -Add the honey mixture to the chicken-potato mixture and stir to combine and coat.
Step 8 -Reduce the heat to medium.
Step 9 -Cover the skillet and cook until the potatoes are tender, the sauce is thickened, and the chicken pieces reach an internal temperature of 165 degrees F, about 8-10 minutes.
Step 10 -Add the frozen vegetables and stir to combine.
Step 11 -Cover the skillet and transfer it from the heat, allowing the vegetables to steam until they are tender, about 2-3 minutes.
Step 12 -Garnish with the lemon slices and serve.
