Ingredients

  • 1/4 cup whole-grain coarse mustard
  • 2 tablespoons Dijon mustard
  • 2 tablespoons yellow mustard
  • 1/4 cup plus 2 tablespoons honey
  • 2 tablespoons olive oil, divided
  • 1 cup yellow onion, chopped
  • 1 tablespoon garlic, minced
  • 4-5 (8-ounce) chicken breasts, boneless and skinless
  • salt, to taste
  • freshly ground black pepper, to taste
  • 4 small sprigs rosemary

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Lightly coat a 9x13-inch baking dish with nonstick cooking spray.

Step 3 -In a large bowl, add the coarse mustard, the Dijon mustard, the yellow mustard, the honey, and 1 tablespoon of the olive oil and whisk to combine.

Step 4 -In a small skillet over medium heat, add the remaining olive oil.

Step 5 -Add the onions to the heated olive oil and sauté until they are golden-brown, about 8 minutes.

Step 6 -Add the garlic to the onions and sauté, about 30 seconds.

Step 7 -Pour the onion-garlic mixture into the bottom of the prepared baking dish.

Step 8 -Season both sides of each of the chicken breasts with the salt and the black pepper.

Step 9 -Place the seasoned chicken breasts on top of the onion-garlic mixture.

Step 10 -Pour the mustard mixture over each of the seasoned chicken breasts so that they are completely covered.

Step 11 -Nestle the sprigs of rosemary between each of the coated chicken breasts.

Step 12 -Bake the chicken breasts until they reach an internal temperature of 165 degrees F, about 25-30 minutes. Tent the dish with aluminum foil near the end of the cooking time to prevent the mustard sauce from burning, as needed.

Step 13 -Serve the chicken breasts, topped with the sauce.
