Ideal Roasted Potatoes are the perfect addition to any meal, and we are sure your team will welcome them with open arms! Baby Red Potatoes take a little dip in a boiling hot tub. Then, they're tossed in a parmesan-herb-garlic mixture and baked until crispy. If your potato game needs a new player, Ideal Roasted Potatoes are the best to put on the roster. These little spuds will definitely hit it out of the park when it comes to dinner! Game on!
Ingredients
- 3 pounds baby red potatoes, washed and quartered
- 1/4 cup olive oil, plus more, to taste
- 6 large cloves garlic, finely chopped or minced
- salt, to taste
- freshly cracked black pepper, to taste
- 1 tablespoon Italian seasoning
- 3/4 cup parmesan cheese, freshly grated
- 1/2 cup unsalted butter
- fresh parsley, to taste, chopped
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Coat an 18x26-inch baking sheet with nonstick cooking spray.
Step 3 -In a large pot of boiling water, parboil the baby red potatoes, about 5-8 minutes. Drain the water.
Step 4 -In a large bowl, add 1/4 cup of the olive oil, the garlic, the salt, the black pepper, the Italian seasoning, and the parmesan cheese and whisk to combine. If the parmesan cheese absorbs the olive oil, add the extra oil, as needed, and mix to combine.
Step 5 -Add the parboiled potatoes to the spice mixture and toss to evenly coat.
Step 6 -Arrange the seasoned potatoes on the prepared baking sheet in a single layer, cut-side down.
Step 7 -Place the baking sheet on the bottom rack of the oven and bake, flipping with tongs after 15 minutes, until the potatoes are browned and the edges are crisp, about 25 minutes.
Step 8 -While the potatoes are baking, in a small microwave-safe bowl, add the butter and microwave until it has melted.
Step 9 -Add the parsley to the melted butter and stir to combine.
Step 10 -Transfer the baking sheet to a wire rack and drizzle with the butter mixture. Toss to coat.
Step 11 -Serve the potatoes garnished with more of the parsley.
