And yet, you'll be asking for the oft-forgotten day once you realize that Tuesday means Taco Tuesday, and that means you'll get to enjoy the Is-It-Tuesday-Yet Bake! This Tex-Mex casserole is loaded with juicy taco meat, savory refried beans, and even a little smoky barbecue sauce for a touch of sweetness, all baked atop a taco-seasoned potato crust. No need for tortillas here! Is-It-Tuesday-Yet Bake might just make every day a Tuesday!

Ingredients

  • For the bake:
  • 1/4 cup margarine
  • 1/2 cup milk
  • 1 (1-ounce) package taco seasoning, divided
  • 2 cups instant mashed potato mix
  • 1 pound ground beef, cooked and drained
  • 1 (15-ounce) can refried beans
  • 1/2 cup barbecue sauce
  • 1/4 cup water
  • Optional, for serving:
  • Mexican cheese, to taste, shredded
  • lettuce, to taste, shredded
  • tomatoes, to taste, diced
  • onions, to taste, diced
  • sour cream, to taste

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Melt the margarine in a saucepan.

Step 3 -Add the milk and 2 tablespoons of the taco seasoning mix.

Step 4 -Transfer the saucepan from the heat and stir in the mashed potato mix.

Step 5 -Press the potato mixture onto the bottom and slightly up the sides of an 8x8-inch baking dish.

Step 6 -To a skillet over medium heat, add the ground beef, the refried beans, the barbecue sauce, the water, and the remaining taco seasoning and cook, while stirring, until bubbly, about 5-7 minutes.

Step 7 -Add the beef mixture to the prepared potato crust.

Step 8 -Bake, uncovered, until heated through and the flavors have melded together, about 30-35 minutes.

Step 9 -Serve with the Mexican cheese, the lettuce, the tomatoes, the onions, and the sour cream.
