The beef is pan-seared so it has a beautiful jacket and then roasted so it's rosy and tender on the inside! Lightly seasoned and topped with rich butter, there's nothing here to distract from the wonderful beef flavor of the tenderloin! Ingredients

  • 1/2 tablespoon olive oil
  • 1 (6-ounce) beef tenderloin steak
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon coarsely ground black pepper
  • 1/2 tablespoon butter

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a small, oven-safe skillet over medium-high heat, add the oil and heat for 30 seconds.

Step 3 -Pat the steak dry with a paper towel.

Step 4 -Season the steak on all sides with the salt and the pepper.

Step 5 -Add the steak to the hot oil and sear until golden on both sides, about 4 minutes per side.

Step 6 -Transfer the skillet to the oven and roast until the steak reaches an internal temperature of 120 degrees F for rare doneness, about 3-4 minutes, 130 degrees F for medium-rare doneness, about 4-5 minutes, or 140 degrees F for medium doneness, about 5-6 minutes.

Step 7 -Transfer the skillet from the oven.

Step 8 -Add the butter on top of the steak and immediately tent the skillet with foil.

Step 9 -Allow the steak to rest for 5 minutes until it reaches an internal temperature of 125 degrees F for rare doneness, 135 degrees F for medium-rare doneness, or 145 degrees F for medium doneness.

Step 10 -Slice the steak against the grain and serve.
