You have to forgive them their fantasy; it's easy to be swept away by this Mediterranean Scramble! Fluffy scrambled eggs envelop bright tomatoes, wilted tender spinach, and creamy, sharp feta cheese. It's a familiar breakfast with an Athenian twist! Mediterranean Scramble will have you scrambling for more!
Ingredients
- 1 tablespoon vegetable oil
- 1/3 cup tomato, seeded and diced
- 1 cup baby spinach
- 3 eggs, lightly beaten
- 2 tablespoons feta cheese, crumbled
- salt, to taste
- black pepper, to taste
Directions
Step 1 -In a frying pan over medium heat, add the vegetable oil.
Step 2 -Add the tomatoes and the spinach to the hot oil and cook, while stirring, until the spinach is wilted, about 1 minute.
Step 3 -Add the eggs to the tomato mixture and cook, while stirring with a rubber spatula, until the eggs start to scramble, about 30 seconds.
Step 4 -Add the feta cheese to the scrambled eggs and cook, while stirring, until the eggs reach your preferred level of doneness, about 1-3 minutes.
Step 5 -Season the eggs to taste with the salt and the black pepper.
Step 6 -Serve.
