Old-World Chicken Scallopini pan-sears the savory chicken until golden-brown, then tosses it with tender pasta and a light, creamy, poultry-flavored sauce with just a hint of refreshing lemon! No one can leave the table hungry after diving into a plate of Old-World Chicken Scallopini! It's just not possible; people will be asking for seconds and thirds before that ever happens!
Ingredients
- 1 tablespoon vegetable oil
- 2 tablespoons plus 1 cup butter, divided
- 4 thin-cut chicken breasts, skinless and boneless
- 2 cups Italian seasoned breadcrumbs
- 4 ounces fresh lemon juice
- 1/4 cup chicken broth or white wine
- 1/2 cup heavy whipping cream
- 1 pound linguine pasta, cooked
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -Heat the oil and 2 tablespoons of the butter in a large skillet over medium-high heat.
Step 2 -Coat the chicken in the breadcrumbs.
Step 3 -Sauté the chicken in the oil and butter mixture until browned and cooked through, about 5 minutes per side.
Step 4 -In a medium pan, heat the lemon juice and the chicken broth over medium heat.
Step 5 -Bring the broth mixture to a boil.
Step 6 -Reduce the heat to medium-low.
Step 7 -Add the heavy cream and simmer until thickened.
Step 8 -Slowly add the remaining butter until incorporated.
Step 9 -Add the pasta to the lemon-butter sauce.
Step 10 -Season the pasta with the salt and the pepper.
Step 11 -Add the chicken to the pasta and the sauce.
Step 12 -Garnish with the parsley and serve.
