Ingredients
- 2 mushrooms, sliced
- 1/4 cup spinach
- 2 tablespoons green onions, chopped
- 1 tablespoon frozen peas
- 2 tablespoons carrots, shredded
- 1 tablespoon fresh ginger, grated
- 1/2 cup ramen noodles or rice noodles, cooked according to the package directions
- 1 tablespoon soy sauce
- 1 teaspoon hoisin sauce
- 1 egg, optional, soft-boiled, halved
- 1 cup vegetable stock or chicken stock
- 1 teaspoon chili sauce, optional, for serving
Directions
Step 1 -In a wide-mouth Mason jar or a similar glass container with a lid, add the mushrooms, the spinach, the green onions, the frozen peas, the carrots, the ginger, the noodles, the soy sauce, the hoisin sauce, and the egg.
Step 2 -In a small saucepan over high heat, add the vegetable stock and heat until it is just boiling hot.
Step 3 -Add the hot broth to the Mason jar and seal the lid.
Step 4 -Let the soup mixture sit undisturbed for 30 seconds.
Step 5 -Serve immediately topped with the chili sauce.
