When life gets a little wonky and all you want to do is escape for a minute, flea right to this Run-Away Bake! This big bite of comfort brings you cheesy chicken and broccoli (that are mixed with some fluffy rice) and will make all your worries melt away in an instant. Sometimes you just need some good food to make everything all right again. So, stay where you are and make the Run-Away Bake instead! It's all going to deliciously work out!
Ingredients
- 1/3 cup all-purpose flour
- 4 cups 2% milk, divided
- 2 (8.8-ounce) packages microwavable brown rice, cooked
- 3 cups fresh broccoli florets
- 3 cups rotisserie chicken, shredded
- 1 1/2 cups reduced-fat extra-sharp cheddar cheese, shredded
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup whole-wheat panko breadcrumbs
- 1 tablespoon canola oil
- dried herbs, of your choice, to taste, for garnish
Directions
Step 1 -Position an oven rack 6 inches from the heat source, then preheat the oven to 400 degrees F.
Step 2 -In a small bowl, whisk the flour and 1 cup of the milk together until it is smooth.
Step 3 -In a large, broiler-safe skillet over medium-high heat, add the remaining milk and bring it to a boil, stirring often.
Step 4 -Reduce the heat to medium, then gradually whisk the flour mixture into the simmering milk until it is smooth.
Step 5 -Increase the heat to medium-high. Boil the milk mixture, stirring constantly, until it has thickened, about 2-3 minutes.
Step 6 -Stir the rice and the broccoli florets into the milk mixture until it is combined.
Step 7 -Cook the broccoli mixture over medium-high heat, stirring occasionally, until the broccoli florets are bright green, about 2 minutes.
Step 8 -Add the shredded chicken, the cheddar cheese, the salt, and the pepper to the broccoli mixture and stir until the cheese has melted. Transfer the skillet from the heat.
Step 9 -In a small bowl, add the panko breadcrumbs and the oil and stir to combine.
Step 10 -Evenly sprinkle the panko breadcrumb mixture over the chicken mixture.
Step 11 -Transfer the skillet to the oven and bake the chicken casserole until it is bubbly, about 15 minutes.
Step 12 -Switch the oven to the broil setting and broil until the top of the chicken casserole is golden-brown, about 1-2 minutes.
Step 13 -Transfer the skillet from the oven and let the chicken casserole cool, about 5 minutes.
Step 14 -Serve the chicken casserole garnished with the dried herbs.
