This delicious take on potato salad is made of tender, whole red potatoes cooked until fluffy and then coated in a tangy, creamy, savory sauce for extra scrumptious goodness! Oh, and bacon. Ingredients
- 2 pounds small red potatoes, washed
- water, to taste
- 2/3 cup mayonnaise
- 1/4 cup buttermilk
- 2 tablespoons cider vinegar
- 1 clove garlic, minced
- 1/2 cup celery, chopped
- 2 scallions, chopped
- 1 teaspoon sugar
- salt, to taste
- black pepper, to taste
- 6 slices bacon, cooked and crumbled, for topping
Directions
Step 1 -In a large saucepan, add the potatoes and enough of the water to cover them by about 1 inch.
Step 2 -Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
Step 3 -Drain the potatoes and allow them to cool.
Step 4 -In a large mixing bowl, add the potatoes, the mayonnaise, the buttermilk, the cider vinegar, the garlic, the celery, the scallions, and the sugar gently stir to combine.
Step 5 -Season the potato salad with the salt and the black pepper and stir gently until well-combined.
Step 6 -Top with the bacon crumbles and serve.
