Ingredients
- 4 teaspoons cornstarch
- 2/3 cup water
- 1/4 cup butter, cubed, plus 3 tablespoons butter, melted, divided
- 3 cups fresh or frozen corn
- 1 (5-ounce) can evaporated milk
- 3/4 teaspoon plus 1 1/2 teaspoons sugar, divided
- 1/2 teaspoon plus 3/4 teaspoon salt, divided
- 3 large eggs
- 3/4 cup 2% milk
- 1/4 teaspoon pepper
- 3 cups white bread, cubed
- 1 small onion, chopped
- 1 cup rice cereal, slightly crushed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat an 8-inch square baking dish with cooking spray.
Step 3 -In a small bowl, mix the cornstarch and the water until it is smooth.
Step 4 -In a large saucepan over medium heat, melt 1/4 cup of the cubed butter.
Step 5 -Stir the corn, the evaporated milk, 3/4 teaspoon of the sugar, and 1/2 teaspoon of the salt into the melted butter and bring to a boil.
Step 6 -Stir the slurry mixture into the corn mixture and bring to a boil, stirring constantly.
Step 7 -Cook the corn mixture, stirring constantly, until it has thickened, about 1-2 minutes.
Step 8 -Transfer the saucepan from the heat and let the corn mixture cool slightly.
Step 9 -In a large bowl, add the eggs, the milk, the pepper, the remaining sugar, and the remaining salt and whisk until it is blended.
Step 10 -Add the bread cubes, the onion, and the corn mixture to the egg mixture and stir to combine.
Step 11 -Pour the corn casserole in the prepared baking dish.
Step 12 -In a small bowl, add the rice cereal and the remaining melted butter and toss until it is well-combined.
Step 13 -Sprinkle the rice cereal mixture over the corn casserole and bake until it is golden-brown, about 10-15 minutes.
Step 14 -Transfer the baking dish from the oven and let the corn casserole cool, about 5-10 minutes.
