Simple Cauliflower Casserole delivers what it promises! The mild, tender cauliflower is cooked in a savory, creamy chicken sauce for a savory poultry flavor. Ingredients
- 1 (1-pound) head cauliflower
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 2 ounces sharp cheddar cheese, grated
- 1/4 cup panko breadcrumbs
- 1/4 cup salted butter, thinly sliced
- fresh flat-leaf parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat an 8-inch square baking dish with cooking spray.
Step 3 -Cut the cauliflower into florets.
Step 4 -Bring a large saucepan of salted water to a boil over high heat.
Step 5 -Add the cauliflower florets and boil until just tender, about 4-5 minutes.
Step 6 -Drain the cauliflower florets and return them to the saucepan.
Step 7 -In a small bowl, add the cream of chicken soup and the sour cream and stir to combine.
Step 8 -Add the soup-sour cream mixture to the cauliflower and toss to combine.
Step 9 -Transfer the cauliflower mixture to the prepared baking dish.
Step 10 -Sprinkle the cauliflower mixture with the cheese and the panko.
Step 11 -Dot the top of the caluiflower mixture with the butter.
Step 12 -Bake until the casserole is bubbly and the panko is golden, about 30 minutes.
Step 13 -Serve garnished with the parsley.
