Ingredients

  • 2 pounds cube steaks, round steaks, or minute steaks
  • 6 slices bacon
  • salt, to taste
  • pepper, to taste
  • 1 large onion, sliced
  • 1/2 cup red wine
  • 2 cups beef broth
  • 4 ounces mushrooms, halved
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dry rosemary
  • 1 bay leaf
  • 2 tablespoons water
  • 2 tablespoons cornstarch

Directions

Step 1 -Using a meat mallet or tenderizer, pound the steaks.

Step 2 -In a skillet over high heat, cook the bacon until crispy.

Step 3 -Remove the bacon from the pan and set it aside, reserving the fat in the bottom of the pan.

Step 4 -Season the steaks with salt and the pepper. Then, brown them in the bacon fat on both sides, about 1-2 minutes per side.

Step 5 -Set the steaks in the bottom of a 6-quart slow cooker.

Step 6 -Add the onions to the skillet and cook in the leftover bacon fat until softened, about 2-3 minutes.

Step 7 -Transfer the onions into the slow cooker.

Step 8 -Pour the wine into the skillet, scraping any brown bits off the bottom, then pour it into the slow cooker.

Step 9 -Add beef broth, the mushrooms, the tomato paste, the garlic, the thyme, the rosemary, and the bay leaf into the slow cooker.

Step 10 -Cook on low for 8-9 hours, or 4-5 hours on high.

Step 11 -Remove and discard the bay leaf.

Step 12 -In a separate bowl, mix the water and the cornstarch. Then, stir the slurry mixture into the slow cooker and cover.

Step 13 -Cook until thickened, about 15 minutes.

Step 14 -Crumble the reserved bacon over top of the beef mixture.

Step 15 -Serve immediately.
