When the week has just been too much, you need a nice helping of Slow Down Chicken to make things right. This little number isn't super fancy but it's definitely not lacking in flavor either. It's creamy, crunchy, cheesy, and provides you with some nutritious broccoli to ensure you will feel your best after dinner. Don't let the craziness of the week keep you from feeling happy, let Slow Down Chicken make everything great again!
Ingredients
- 1 1/2 cups panko breadcrumbs, divided
- 1/4 cup plus 2 tablespoons unsalted butter, divided
- 1 small red onion, chopped
- 4 large cloves garlic, minced
- 4 cups broccoli florets, bite-sized pieces
- 3 cups rotisserie chicken, shredded
- 3 cups white rice, cooked
- 1 1/2 cups sour cream
- 1 cup mayonnaise
- 1/4 cup fresh lemon juice
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 2 cups sharp white cheddar cheese, shredded, divided
- 2 tablespoons fresh parsley, chopped, divided
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly coat a large, rimmed baking sheet with cooking spray.
Step 3 -Evenly sprinkle the prepared baking sheet with 1/4 cup of the panko breadcrumbs.
Step 4 -In a small skillet over medium-high, melt 1/4 cup of the butter.
Step 5 -Add the onions to the melted butter and cook, stirring occasionally, until they are tender, about 3 minutes.
Step 6 -Add the minced garlic to the onions and cook, stirring often, until it is fragrant, about 1 minute. Transfer the skillet from the heat.
Step 7 -In a large bowl, add the onion mixture, the broccoli florets, the shredded chicken, the cooked rice, the sour cream, the mayonnaise, the lemon juice, the salt, the pepper, 3/4 cup of the remaining breadcrumbs, 1 1/2 cups of the cheese, and 1 tablespoon of the parsley and stir to combine.
Step 8 -Evenly spread the chicken mixture in a single layer over the breadcrumbs on the prepared baking sheet.
Step 9 -In a medium, microwave-safe bowl, add the remaining butter and heat in the microwave until it has melted, about 30 seconds.
Step 10 -Add the remaining 1/2 cup of the breadcrumbs, the remaining cheese, and the remaining parsley to the melted butter and stir to combine.
Step 11 -Evenly sprinkle the breadcrumb mixture over the chicken mixture.
Step 12 -Bake the chicken casserole until it is golden-brown, about 30 minutes.
Step 13 -Let the chicken casserole stand, about 5 minutes.
Step 14 -Serve.
