Ingredients

  • 1 (20-ounce) package dried green split peas, such as Hurst's® HamPeas®, rinsed and drained well
  • 5 cups chicken broth
  • 2 cups water
  • 1 meaty ham bone or ham hock
  • 3 stalks celery, diced
  • 2 large carrots, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/2 teaspoon black pepper, plus more, to taste
  • 1/2 teaspoon thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • salt, to taste

Directions

Step 1 -In a 6-quart slow cooker, combine the peas, the chicken broth, the water, the ham bone, the celery, the carrots, the onions, the garlic, the bay leaf, 1/2 teaspoon of the pepper, and the thyme.

Step 2 -Cover the slow cooker and cook the soup, about 4-5 hours on high heat or about 8 hours on low heat.

Step 3 -Remove and discard the bay leaf from the soup, then stir in the parsley.

Step 4 -Taste the soup and season with the salt and the extra pepper, as needed. Stir to combine.

Step 5 -Serve.
