It's that time of year again when you get a hankering for something new and refreshing. Add something new to your pasta pallet with Springy Tortellini. Open your mind to the goodness of cheese tortellini tossed with petite peas, sugar snap peas that's all seasoned with a little fresh basil, mint, and tarragon. Then, add some prosciutto and burrata to reach a new level of great pasta creations. Let Springy Tortellini transform your dinner into an oasis of fabulous flavors. It's the season to try something new!
Ingredients
- For the tortellini:
- 1 (12-ounce) package fresh or frozen cheese tortellini
- 2 tablespoons extra-virgin olive oil, divided
- 1 shallot, chopped
- kosher salt, to taste
- 2 cloves garlic, sliced
- 3/4 cup fresh or frozen petite peas
- 3/4 cup sugar snap peas, sliced
- 3 tablespoons unsalted butter
- 1/4 cup fresh basil, chopped
- 2 tablespoons mint, chopped
- 2 tablespoons fresh tarragon, chopped
- 2 tablespoons lemon juice
- Optional, for serving:
- 1 teaspoon lemon zest, finely grated
- 2 ounces prosciutto, torn into bite-size pieces
- 1 (4-ounce) ball burrata
- crushed red pepper flakes, to taste
Directions
Step 1 -In a large pot of salted, boiling water, add the tortellini and 1 tablespoon of the oil and cook, stirring occasionally, until they are almost al dente, about 1 minute less than package instructions. Drain the water.
Step 2 -While the tortellini are cooking, in a large skillet over medium heat, add the remaining oil.
Step 3 -Add the shallots to the oil and season with the salt. Cook, while stirring, until they start to soften, about 2-3 minutes.
Step 4 -Add the garlic to the shallots and cook, while stirring, until it is fragrant, about 1 minute.
Step 5 -Add the petite peas and the sugar snap peas to the shallot-garlic mixture and cook, stirring occasionally, until the peas are just heated through, about 2-3 minutes.
Step 6 -Pour the pea mixture in a medium bowl.
Step 7 -In the same skillet over medium heat, melt the butter.
Step 8 -Add the tortellini to the melted butter and toss to coat.
Step 9 -Spread the tortellini in an even later and cook, tossing occasionally, until they are golden-brown and al dente, about 5-6 minutes.
Step 10 -Reduce the heat to low. Add the pea mixture to the tortellini and toss to combine.
Step 11 -Stir the basil, the mint, the tarragon, the lemon juice, and the salt into the tortellini mixture and stir to combine.
Step 12 -Serve the tortellini with your desired toppings.
