All it takes are some coarsely grated potatoes with a little bit of cream and in no time, you can enjoy a fried potato pancake that is a complement to your morning meal. Ingredients

  • 1 egg
  • 1/4 cup light cream or half-and-half
  • 9 ounces baking or russet potatoes, peeled and coarsely grated
  • 2 tablespoons all-purpose flour
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons butter

Directions

Step 1 -In a bowl, add the egg with the light cream and whisk to combine.

Step 2 -Add the potatoes, the flour, the salt, and the pepper to the egg-cream mixture and stir to mix. It will be slightly runny.

Step 3 -In a frying pan over medium heat, melt the butter.

Step 4 -Add the potato mixture to the melted butter and cook, flipping as needed, until the surface is golden-brown and the potato is cooked through, 8-10 minutes on each side.

Step 5 -Cut the boxty into wedges and serve.
