Ingredients
- 1/2 tablespoon mayonnaise
- 1 everything bagel, split and toasted
- 1/2 tablespoon vegetable oil
- 2 eggs, lightly beaten
- salt, to taste
- black pepper, to taste
- 1 slice cheddar cheese
- 1 slice tomato
- 1/2 avocado, sliced
- 1/4 cup arugula
Directions
Step 1 -Spread the mayonnaise on the cut-side of the top half of the bagel.
Step 2 -In a nonstick frying pan over medium heat, add the oil.
Step 3 -Add the beaten eggs to the hot oil and cook, leaving them relatively undisturbed and flipping as needed, until they cook into an easily foldable sheet, about 2-3 minutes.
Step 4 -Fold the eggs up so they will fit onto the bagel.
Step 5 -Place the folded, cooked egg sheet on the bottom half of the bagel.
Step 6 -Season the egg sheet with the salt and the black pepper.
Step 7 -Add the cheese on top of the warm eggs.
Step 8 -Add the tomato, the avocado, and the arugula on top of the cheese layer.
Step 9 -Close the sandwich by replacing the top bagel half, cut-side down, on top of the arugula layer.
Step 10 -Slice the sandwich down the middle and serve.
