Good morning, sunshine! We're gonna get things started in a very delicious way. Imagine eating a fluffy pancake, taco-like bite that's loaded with fluffy eggs and a bunch of other yummy fillings, and not feel guilty about it. Well... that's what these Sunrise Breakfast Wraps are all about! Packed full of all the things that are good for you, these surely will get your day going in the best way ever! You'll be full of energy, and lots of delicious flavors, thanks to these Sunrise Breakfast Wraps. What a day it's going to be!
Ingredients
- 3/4 cup white whole-wheat flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt, plus more, to taste
- 1 1/2 cups reduced-fat milk
- 9 large eggs, divided
- 1 1/2 tablespoons extra-virgin olive oil
- ground pepper, to taste
- pico de gallo or fresh salsa, to taste, drained
- avocado, to taste, mashed
- cilantro leaves, to taste, for garnish
Directions
Step 1 -In a medium bowl, add the flour, the baking soda, and 1/4 teaspoon of the salt and whisk to combine.
Step 2 -In a small bowl, add the milk, 1 of the eggs, and the oil and whisk to combine.
Step 3 -Add the milk mixture to the flour mixture and whisk until it is smooth.
Step 4 -Coat a medium nonstick skillet with nonstick spray, then place it over medium heat.
Step 5 -Ladle about 1/3 cup of the batter into the center of the heated skillet, then immediately tilt and rotate the pan to evenly spread it over the bottom. Cook until the bottom is golden-brown, about 1 minute 30 seconds-2 minutes.
Step 6 -Flip the pancake with a heatproof silicone spatula and cook until the other side is golden-brown, about 1 minute.
Step 7 -Transfer the pancake to a plate and cover to keep warm. Repeat the cooking process with the remaining batter.
Step 8 -Wipe out the skillet, then lightly coat it with nonstick spray. Place it over medium heat.
Step 9 -In a large bowl, add the remaining eggs, the extra salt, and the pepper and whisk to combine.
Step 10 -Pour the egg mixture into the prepared skillet and cook, while gently stirring, until it is set, about 2-3 minutes.
Step 11 -Evenly add the egg mixture over half of each of the pancakes, then evenly top with the pico de gallo and the avocado. Fold the wraps in half.
Step 12 -Serve the wraps garnished with the cilantro.
