Oooh sushi in casserole form! That's a new twist on both Japanese and American cooking, for sure! Sushi Bake features a layer of rice holding up a bed of succulent salmon and some beloved sweet, savory crab in a mix of tangy and smooth Japanese mayo and spicy sriracha! Served up with your favorite sushi toppings, Sushi Bake is how you get that fresh sushi experience without trying to expertly roll sushi yourself!

Ingredients

  • For the bake:
  • 3 cups white rice, can substitute sushi rice
  • 2 tablespoons rice vinegar
  • 1/2 pound salmon, boneless and skinless
  • salt, to taste
  • black pepper, to taste
  • paprika, to taste
  • garlic powder, to taste
  • 1 (8-ounce) container imitation crab
  • 3 ounces cream cheese
  • 1/4 cup Japanese mayonnaise
  • 1 tablespoon sriracha
  • furikake or shredded seaweed, to taste
  • Optional, for serving:
  • scallions, to taste, chopped or sliced
  • sriracha, to taste
  • spicy mayonnaise, to taste, homemade or store-bought

Directions

Step 1 -Preheat the oven to 380 degrees F.

Step 2 -In a rice cooker or on the stovetop, cook the rice according to the package directions.

Step 3 -Allow the rice to cool slightly.

Step 4 -Add the rice vinegar to the cooked rice, stir to combine, then fluff the rice with a fork.

Step 5 -Preheat an air fryer to 400 degrees F. Optionally, place a skillet on the stovetop over medium-high heat.

Step 6 -Season the salmon with the salt, the black pepper, the paprika, and the garlic powder.

Step 7 -Cook the salmon in the air fryer until it reaches an internal temperature of 145 degrees F, about 9 minutes.

Step 8 -Transfer the salmon from the air fryer.

Step 9 -In a bowl, add the salmon and the imitation crab and shred them until they are roughly in bite-sized pieces.

Step 10 -Add the cream cheese, the Japanese mayonnaise, and 1 tablespoon of the sriracha to the seafood mixture and stir until combined.

Step 11 -In a 9x13-inch casserole dish, add the rice and flatten it into an even layer.

Step 12 -Add the furikake evenly to the rice layer.

Step 13 -Add the seafood mixture to the casserole dish, spreading it out evenly on top of the furikake-seasoned rice layer.

Step 14 -Bake until the casserole is heated through, about 10 minutes.

Step 15 -Optionally, switch the oven to broil and broil until it is crunchy on top, about 2-3 minutes.

Step 16 -Transfer the casserole dish from the oven.

Step 17 -Top the bake with the scallions, the extra sriracha, and the spicy mayonnaise and serve.
