Ingredients

  • 1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
  • 2 tablespoons water
  • 1 tablespoon salted butter
  • 1 pound pork breakfast sausage
  • 6 large eggs
  • 1 cup half-and-half
  • 1/2 teaspoon Italian seasoning
  • 2 cups fine, dry breadcrumbs
  • 1 cup onion, refrigerated and pre-chopped
  • 8 ounces mozzarella cheese, shredded and divided
  • parsley, to taste and chopped

Directions

Step 1 -Lightly grease a 5-quart slow cooker.

Step 2 -Place the sweet potatoes in a microwave-safe bowl with the water.

Step 3 -Cover the bowl with microwave-safe plastic wrap and microwave on high until tender, about 4 minutes.

Step 4 -Discard the plastic wrap and set the potatoes aside.

Step 5 -In a large skillet over medium-high heat, melt the butter.

Step 6 -Brown the sausage in the melted butter, stirring often, until browned and crumbled, about 5-6 minutes.

Step 7 -In a medium bowl, whisk the eggs, half-and-half, and the Italian seasoning together.

Step 8 -Add the cooked sausage, the egg mixture, the breadcrumbs, the tender sweet potatoes, the onion, and 1 cup of the cheese in the prepared slow cooker, stirring to combine.

Step 9 -Sprinkle the mixture with the remaining cheese.

Step 10 -Cover and cook on low heat until almost set, about 3 1/2-hours on low.

Step 11 -Uncover and cook on low until the edges are browned and the liquid on top is evaporated, about 20 minutes.

Step 12 -Garnish with the parsley.

Step 13 -Serve.
