The Southerner is a unique kind of sandwich. It's not a grilled cheese, but it has the melty, creamy comfort of a grilled cheese (with some herb and garlic flavoring for good measure). It has fresh vegetables, such as juicy cucumbers, bright bell peppers, and spicy banana peppers, which nod to a salad, but it's definitely a sandwich. And it has beets, which add a distinct flavor all on their own! Ultimately, The Southerner is its own thing... and it's delicious!
Ingredients
- 4 slices whole-wheat bread
- 1/2 cup garlic-and-herb cheese spread
- 1 cup cucumbers, peeled and thinly sliced
- 1 medium yellow bell pepper, thinly sliced
- 1 medium beefsteak tomato, sliced 1/4-inch-thick
- 1/2 cup beets, cooked and sliced
- 2 tablespoons mild banana pepper rings
- 8 leaves butter lettuce leaves
Directions
Step 1 -On each slice of the bread, spread 2 tablespoons of the herb-and-garlic cheese spread.
Step 2 -Between 2 of the bread slices, evenly divide the cucumbers, the bell peppers, the tomatoes, the beets, and the banana peppers.
Step 3 -Top each of the vegetable mixtures with 4 leaves of the lettuce.
Step 4 -Close the sandwiches with the remaining bread slices, spread-side down.
Step 5 -Slice the sandwiches in half diagonally and serve.
