There are pasta salads and then there is the Ultimate Tortellini Salad! Cheese-filled, tender tortellini beat out other kinds of pasta any day of the week! And all that's before we get into the mix of vibrant vegetables, sweet sundried tomatoes, nutty parmesan cheese, and succulent salami that make up the rest of the Ultimate Tortellini Salad! Seriously, if you aren't a fan of pasta salads, this antipasti pasta salad will change your mind!

Ingredients

  • 1 (20-ounce) package refrigerated or frozen cheese tortellini
  • 2/3 cup plus 2 tablespoons olive oil, divided
  • 1/3 cup white wine vinegar
  • 1/4 cup sun-dried tomatoes in oil, drained and finely chopped
  • 1/4 cup parmesan cheese, grated, plus more, to taste, for garnish
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups cherry tomatoes, halved
  • 1 (8-ounce) package fresh mozzarella, cut into 1/2-inch pieces
  • 1 cup salami, sliced
  • 1 cup sliced black olives
  • 1 cup zucchini, thinly sliced
  • 1 cup yellow or green bell pepper, thinly sliced
  • 1/2 cup pepperoncini peppers, sliced
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup fresh basil, chopped

Directions

Step 1 -In a large pot of salted, boiling water, cook the tortellini according to the package directions.

Step 2 -Drain the tortellini and rinse it under cold water.

Step 3 -Add the tortellini back to the pot and add 2 tablespoons of the olive oil, tossing to coat. Set the tortellini aside.

Step 4 -In a large bowl, add the remaining olive oil, the white wine vinegar, the sun-dried tomatoes, 1/4 cup of the parmesan, the honey, the salt, and the pepper and whisk to combine.

Step 5 -Add the cooked tortellini, the cherry tomatoes, the mozzarella, the salami, the olives, the zucchini, the bell peppers, the pepperoncinis, and the red onions to the dressing mixture in the large bowl and toss to combine.

Step 6 -Cover and refrigerate the salad for at least 1 hour and up to 3 days.

Step 7 -Just before serving, add the basil to the salad and stir gently to combine.

Step 8 -Serve garnished with the extra parmesan.
